 Tofu Steak




In Korea and Japan, there is a dish known as 'Hambarg Steak,' which actually refers to 'Hamburger Steak.' The name 'Hambarg' likely results from how Japanese speakers pronounce it, and it closely resembles 'Hamburg,' the German city.

Although traditional hamburger steak is made with a beef patty, this version uses tofu instead.



Here is the recipe.


<Ingredient: 5 servings>

One tofu

1/2 carrot

1/2 zucchini

1/2 onion

3-4 mushrooms

1/2 paprika

(you can use any vegetables available in your refrigerator.)

3 eggs

1 cup of breadcrumbs

2 Tbsp of starch

salt & pepper

<Sauce>

Tomato ketchup 50g

Teriyaki sauce 3 Tbsp or Oyster sauce 

Soy sauce 2 Tbsp

Butter 1 Tbsp

Sugar 1/2 tsp or Sweetener 1/2 packet

Sliced onions and mushrooms

Water 2/3 cup or 160 ml

1 Tbsp of roux (optional)



<How to Make Tofu Patties>

 

1. Drain the tofu for about 2 hours. I usually set it in a strainer the day before cooking so the excess water can drip out. If you’re short on time, you can microwave the tofu for 3 minutes to release water, but it will become very hot, which makes it harder to handle.

 


2. Wrap the tofu in cheesecloth (or a clean kitchen towel) and squeeze to remove as much water as possible. Discard the liquid.

 




3. Finely chop the vegetables with a knife or in a blender/food processor.

 




4. In a large bowl, combine the squeezed tofu, chopped vegetables, 3 eggs, 2 Tbsp starch, and a pinch of salt and pepper. Mix until well combined.

 




5. Shape the mixture from step 4 into patties. While you shape them, preheat the oven to 390°F.

     Line a cookie sheet with parchment paper. Lightly oil the parchment (for example, in circles where you plan to place each patty).

6. Form the patties to the size and shape shown in the photo.

 

7. Place the patties on the prepared cookie sheet.

 8. Bake at 390°F for 10–15 minutes.

 


  

<Making the gravy>

 

1. Thinly slice the onion and mushrooms.

 


2. Heat a frying pan and melt a small piece of butter.

 


3. Sauté the onion and mushrooms in the butter.

 


4. Add water.

 


5. Stir in ketchup, soy sauce, teriyaki sauce or oyster sauce, and sugar (or your preferred sweetener).

 




6. If you have roux, add a little to thicken the sauce.

7. Simmer over low heat until the sauce thickens.

 


8. Serve the tofu steak with the sauce.
