KIMCHI FRIED RICE

Every Tuesday, my husband goes to his Dad's house to have a supper with him. Means every Tuesday, I can cook authentic Korean food for me and my son. 


When I returned from work, I was so hungry. So I cooked Kimchi Fried Rice for me and my son. Many Moms in Korea cook Kimchi Fried Ric as in-between meals for their hungry kids who just return from their school because it is quick.  

 

Kimchi is a signature food of Korea. In Korea, there are dozens of different types of Kimchi. However, most common and widely eaten one is napa cabbage Kimchi


Kimchi is a fermented food which contains a lot of lactobacillus. For making Kimchi Fried Rice, you'd better use fermented Kimchi, not freshly made Kimchi.

 Because the fermented Kimchi liquid can rich its unique flavor of Kimchi Fried Rice.

Kimchi Fried Rice with water kimchi

 

<Ingredient : 2 servings>

1/4 white onion 

1 small potato

1/4 zucchini

1/2 cup of chopped pork

1 cup of chopped Kimchi

1 cup of chopped green onions

2 bowls of steamed rice

1 table spoon of soy sauce

3 table spoons of cooking oil

3 pieces of sliced seaweeds

1 egg


<Preparation>


1. Chop vegetables like the below photos. I usually use potatoes, onions and bell peppers. But there was no bell peppers in the refrigerator. So I used zucchini instead. A little bit hard vegetables are good to go with. 





If you have red bell pepper, then the color combination will be perfect!


Slight less than half cup of each vegetable is enough for 2 servings. 



2. Chop 2 stalks of green onions, too. 
 



3. Chop pork. If you can buy chopped pork, you can use them. In my freezer, there was only 1 pork rib, so I melted it with water and chopped it thinly. 


I found 1 remaining pork rib from last week's pork rib BBQ



As you put pork meat into cold water, you can melt the meat and also drain blood from the meat. 


Once meat is melted, slice it thinly

Now, preparation is done. Time for cooking! 


1. Turn on the stove with highest flame and put 3 table spoon of cooking oil into wok. 

As the oil gets hot, put chopped green onion first. 






2. After frying green onions for 5-6 seconds, you can smell the flavor of fried green onions. Then add the chopped pork into the wok and fry them together. 






3. As the surface of the pork cooked, then add the rest of vegetables to the wok. Lower the flame to medium heat. 



Using a spatula, quickly fry them 


4. Once all vegetables & pork cooked, add chopped Kimchi to wok. Put away the cooked vegetable to the side and add Kimchi to wok. 




    Fry Kimchi quickly until the surface of Kimchi turns to light yellow. 





This time I used the Kimchi from Walmart. This Kimchi is already cut as small size. When you use home-made Kimchi, you need to chop them to smaller size.

5. Once Kimchi & vegetables are properly cooked, add steamed rice. I added two bowls of steamed rice. 




The diameter is about 5 inches


When we say bowl, the above photo is the most common shape of bowl for steamed rice. The diameter is about 5 inches. You need to add two full bowls of steamed rice.

If you don't have cooked rice at home, you can use ready-cooked instant rice like above. This kind of ready-cooked rice, you can easily find from any kind of supermarket. 
1 instant rice equals to 1 bowl of rice.




Fry them all together



6. When rice and all other ingredients are properly cooked, add Kimchi liquid to the fried rice. 2-3 Table spoons are good enough. By adding Kimchi water, the fried rice will have unique Kimchi flavor. Also the liquid makes the fried rice perfect color - orange!





7. Lower the flame to the lowest heat and mix them all together gently. 
Also add 1 table spoon of soy sauce. The taste will be completed by adding soy sauce. 


If your Kimchi doesn't have enough liquid, you can add dried red hot pepper powder 1 tea spoon instead. In this case, add soy sauce as 2 table spoon. 




7. Finally serve it to the plate. I added sliced dried laver and fried egg like below. 



8. Sliced dried laver is a kind of all-time accent for Korean food. It looks good and tastes good. 

Without laver and egg, just the fried rice is still very good!
